Dark Chocolate Coconut Ice Cream

Hey, guys! Right now, I (Melissa) am at Disney World with the family. Heather is currently packing up her life and preparing to move to Wendell, NC this weekend. So, needless to say, we’re both kind of (really) busy. But we wanted to share this awesome recipe with you anyway. That’s right, we like you guys that much.

This ice cream is super simple and a tasty treat. And on top of that, it’s made with coconut milk, which I’ve heard (although I’m not too sure of the validity of this, who really knows) has some really good fats in it. So this ice cream is easy, tasty, and possibly kind of healthy(ish) for you. In short, you should do it. Meanwhile we’ll be sure to share our Disney pics and the pics of Heather’s new place! Woohoo! Dark Chocolate Coconut Ice Cream

Ingredients:

2 14-ounce refrigerated cans coconut milk (You could you one can of light coconut milk, if you wish)
1/2 cup honey
2/3 cup cocoa powder, divided
1/4 teaspoon cinnamon
Pinch salt

Directions:

  1. In a mixing bowl, whisk together cans of coconut milk and honey until fully incorporated.
  2. Whisk in 1/3 cup of the cocoa powder. It takes a little while to get it totally mixed. Once mixed, add the second 1/3 cup of the cocoa powder and whisk until thoroughly mixed.
  3. Add in cinnamon and salt and whisk some more. Then churn the mixture in an ice cream maker according to manufacturers manual.
