Boy, have we been slack.
We are totally behind on all things blog.
Start with Christmas. Toss in 4 children, fold in too much sugar, and add a pinch of overstimulation. Shake vigorously and you have a serious situation on your hands.
Thus, we are behind on all things blog.
But, we are back! How is everyone? We hope you all thoroughly enjoyed your Christmas and didn’t forget the most important thing of all, Jesus’ birthday!
We celebrated by making Jesus a birthday cake. It was incredibly delicious. So delicious, that it did not make it to a photo shoot.
You know what did make it to a very impromptu photo shoot last week? These Apple-Honey Cheddar Quesadillas. I (Heather) made these for the kiddos for lunch one day and I ended up eating it myself. I know, me, who dislikes pretty much all things apple. But, it seems that I have finally come around to the apple side with this sweet and savory quesadilla. Because this, this is delicious. And so easy. It makes for a totally awesome lunch for the kids and an even more awesome lunch for grown-ups. So, go forth, and combine fruit with cheese.

Apple-Honey Cheddar Quesadilla
½ – 1 Granny Smith apple, peeled and thinly sliced
½ cup cheddar cheese, shredded
Drizzle of honey, to taste
- Spray skillet with nonstick cooking spray and place over medium heat.
- Arrange the apple slices on 1 tortilla and top with cheese and a drizzle of honey.
- Top with second tortilla and place in skillet.
- Cook until golden brown on each side, 2-3 minutes.
- Cut into wedges and serve.
