We were recently totally untruthful and split a membership to Sam’s Club. Technically, your only supposed to give the extra membership card to a household member, but Heather is here enough to qualify for that by my definition of “household member”.
On our most recent trip, we saw avocados were on sale for $2.98 for a 5 count. So naturally I bought 4 bags because who doesn’t need 20 avocados for a family of 4?
The cashier told me a great little story about how the new manager had ordered far too many bags of avocados, resulting in their low price and my happy purchase.
I knew that my son would be eating his first meal of avocados soon, this weekend to be exact, but what to do with all the others? We have wanted to dive into the world of avocado as a sweet component in desserts. So far, avocado has been savory for us so this is a little intimidating. We found ourselves on a happy middle ground with this creation.
This smoothie is a healthy drink that is perfect for breakfast or a light lunch and great for the kiddos. It’s packed full of healthy fats and only uses natural sugars. It has a creamy, almost shake-like consistency which the kids loved and the amounts of everything can be suited to fit a variety of flavor and texture preferences. If Thanksgiving was as bad to you as it was to us, this is the perfect, healthy way to get back on track. Hopefully. Christmas, be good to us.

makes 1 serving
1 Haas avocado, flesh removed
½ -¾ cup milk
1-2 tbsp honey
½ cup pineapple
¼ cup ice (3 cubes)
- Place all ingredients in blender and blend until smooth. Start with less of each ingredient and increase as needed until the desired consistency and taste is reached.
*Note: We used frozen pineapple. Our blender needed a LOT of help, i.e. vigorous shaking, to get the ice incorporated. Perhaps putting the ice in with some milk first would make it a little easier?
