Let me set the scene: a half-naked toddler, a nursing infant, a bouncing 5 month old, and Pilot just taking it all in as we sang Justin Bieber, GMA style.
It’s “oh baby,” not “ooh baby,” just so you know. My two year old will call you out on it. She’s got Bieber Fever. Although, the only time she’s heard him is on our favorite morning television show, Good Morning America.
There was also dancing.
Some nights are just like that. This night was one of those nights. A night where it’s perfectly acceptable to eat nachos for dinner.
With Thanksgiving just a few days away, we thought it would be nice to remind you that dinner can be simple. We often find ourselves forgetting about the simple meals and just how delicious they can be. These nachos are just that. Simple and delicious. Take some chips, smother them in cheese, top with jalapenos to the max, and anything else Mexican inspired that might strike your fancy.
But hey, you don’t have limit yourself to Mexican. If you want spaghetti on your nachos, go for it. I don’t want spaghetti on my nachos. I’m Italian, but only just a little bit. What I like on my nachos are beans, avocado, jalapenos, tomatoes, green onions. You know, the norm. And hot sauce. They are nothing without the hot sauce. Don’t even bother to make them if you don’t have hot sauce. Have you had hot sauce on a chip? Try it, you can thank my second pregnancy for that glorious combination. So quit thinking about turkey and go make some nachos. Relax and enjoy the hot sauce.
