Cap’n Crunch Casserole. Interested?

Our Sweet Potato Cap’n Crunch Casserole is our entry for this year’s Eat to the Beat hosted by Elly Says Opa! It’s an amazingly rich sweet potato casserole with a Cap’n Crunch topping. It’s incredibly sweet, but oh so delicious. It probably fits better on the dessert table than with the main course, but hey, if it has a vegetable it doesn’t qualify as a dessert, right? Vegetables=healthy.

The inspiration for this casserole came from flipping through a Family Christian Bookstore magazine. Melissa and I were sitting around, trying to think of Christian songs that had anything to do with food. There are not very many of those. God made food, people. Delicious, wonderful, decadent food. Let’s start writing about it!

So, we were looking at the Veggie Tales toys when we thought of Veggie Tales. Have you seen Veggie Tales? They are vegetables that are always singing silly, wacky songs! They practically did the work for us! They have one song in particular called “The Pirates Who Don’t Do Anything”. And from that song, You Look Like Cap’n Crunch Casserole was born.

“Well I’ve never plucked a rooster
And I’m not too good at ping pong
And I’ve never thrown my mashed potatoes
Up against the wall”

Mashed potatoes were the first thing we thought of. Since it’s the holidays and all, we changed it up a bit and decided to use sweet potatoes.

“Huh? What are you talking about?
Whats a rooster and mashed potatoes have to do with being a pirate?
Hey, that’s right!
We are supposed to sing about pirate-y things.
And who’s ever kissed a chipmunk?
That’s just nonsense! Why even bring it up?
Am I right? What do you think?
I think you look like Captain Crunch.
Huh? No I don’t!
Do too.
Do not!
You’re making me hungry.
That’s it! You’re walkin’ the plank.
Says who?
Says the Cap’n, that’s who!
Oh yeah? Ay Ay, Cap’n Crunch! hehehehe
Arrrgggghh
Yikes!”

I think you look like Cap’n Crunch. Nuff’ said.

“And I’ve never bathed in yogurt
And I don’t look good in leggings”

Since we were on a roll, we decided to go ahead and incorporate yogurt. We substituted half of the milk called for with vanilla yogurt. You know, put as much sugar as we possibly can into this dish. We didn’t regret it.

So there you have it. You Look Like Cap’n Crunch Casserole. Strange as it may sound, it is very tasty. Tasty enough to even appear on your Thanksgiving Day table. If you’re feeling silly.

You Look Like Cap’n Crunch Casserole

makes 8-10 servings

Ingredients:

Sweet Potato Casserole:
3 cups pureed sweet potatoes
2/3 cup light brown sugar
1/3 cup sugar
1 tsp vanilla
½ cup butter,melted
2 eggs
¼ cup milk
¼ cup yogurt (We used vanilla for additional yumminess)
2 tbsp self rising flour

Topping:
1 cup light brown sugar
1/3 cup butter,melted
1/3 cup all purpose flour
1 cup Cap’n Crunch cereal, crushed

Directions:

  1. Preheat oven to 350°.
  2. In a large bowl on medium speed, mix together all ingredients.
  3. Pour ingredients into a buttered casserole dish.
  4. For the topping, in a small bowl, stir together all ingredients.
  5. Crumble the Cap’n Crunch mixture on top of the sweet potatoes.
  6. Bake for 35-40 minutes, until top is golden brown and set.
